Normally.
Or type in console:
bind 7 slot7
bind 8 slot8
And while we're at it:
bind 9 slot9
bind 0 slot0 (I think)
Signature Pending...

Are there even any weapons in slot 7 or 8? I thought it was just 1-6.

Traitor/Detective weapons and the DNA scanner.
How would you bind a numberkey to a letter, for very quick access?

First you'll need Fast Weapon Switch on, something under keyboard, advanced.
Then, let's say you want V to open up the traitor slot, which is 7...
bind v slot7
It's as simple as that.

Or can't you do something like this...
bind v "slot7; +attack"
Not sure if that would work, I remember having problems with binds that do two things.

I would love a bind that would be something like
bind (key) slot7;+attack2;slot6
Knife -> Throw -> Holster

Well if it did +attack with fast weapon switch off all it would do is select the weapon.

The wait command is required to space out frames.
For instance.
slot7;wait;wait;wait;wait;+attack2;wait;wait;wait;-attack2;wait;wait;slot6
Not sure if that would work, or if it would be considered scripting.

Optimized.

AFAIK "wait" is disabled in gmod to prevent certain exploits.

This appears to be correct.
