How do i get multiple player models to be useable in a map? I've tried setting multiple ttt_map_settings with plymodel but only the last one is used.

Use a logic_case with PickRandom to set a certain model via the appropriate input on ttt_map_settings.

Hmm it doesnt work. Here's an example of my entity:
{
"origin" "0 0 0"
"Case02" "case02"
"Case01" "case01"
"classname" "logic_case"
"OnCase01" "ttt_map_settings,SetPlayerModels,models/player/alyx.mdl,PickRandom,0,-1"
"OnCase02" "ttt_map_settings,SetPlayerModels,models/player/barney.mdl,PickRandom,0,-1"
}
It' still displaying the default TTT player models.

The input needs to fire immediately after the entities are created. You can do this using a logic_auto that fires its OnMapSpawn output to the PickRandom input of the logic_case.
I can't tell what your setup is there. It looks like you've set PickRandom as a parameter or something, I don't know.

Models still arent displaying ingame. Here's the entities i have set:
